THE ORGANIC PRODUCTS.
Saffron, Chianti wine, Vin Santo, Tuscan olive oil.
Saffron flower (november). Saffron is our most characteristical crop: it was cultivated in Middle Age and recently reintroduced in the zone. The price is higher than gold, therefore called "red gold".
Mature vineyeard (september). The vineyard is the most important crop: the red grapes "Sangiovese" are the best for Chianti Wine (Chianti Colli Senesi DOCG); from white grapes "Trebbiano Toscano" and "Malvasia del Chianti" we get Chianti Saint Wine (Vin Santo del Chianti DOC) e Tuscan Table White Wine.
Olive bloom (may-june). The olive grove is registred as the new Denomination of Protected Origin (DOP) of
Tuscan oil extravirgin of olive: the quality is very high since the olives are cold-pressed within 12 hours of being hand-picked, therefore the price is four times higher than that of other origins.
Caper: flower and buds (july-august). The caper plants grows on typical stone walls and offer buds to be conserved in vinegar, otherwise you have a splendid bloom through the whole summer.
We are moreover "Guardian Growers": due to the assignment by the Tuscany Bank of Germinal Plasma, we cultivate vegetables varieties in extinction, in order to conserve a rich patrimony threatened in consequence of the requirements of modern agricolture.
